Apple Egg Breakfast

 
 

Straight from the family cookbook!

1/2 cup butter

2-3 apples, peeled and thinly sliced

6 eggs, beaten

1 1/2 cups milk

1 cup flour

3 tablespoons sugar

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon cinnamon

4 tablespoons brown sugar

  1. Melt butter in a 9x13 baking dish by placing in the oven while preheating to 425°F.

  2. Add the apple slices to the pan (it should sizzle!) and remove it from the oven immediately.

  3. Mix together eggs and milk. Beat in flour, sugar, vanilla extract, salt, and 1/4 teaspoon cinnamon.

  4. Pour batter over apples and sprinkle with brown sugar and remaining 1/4 teaspoon cinnamon.

  5. Bake at 425°F for 20 minutes or until puffed and brown.

  6. Serve immediately.
